September 11, 2012MILTON, Ga. — Nationally recognized Milton's Cuisine and Cocktails recently announced the appointment of Chef Shane Touhy as the restaurant's new executive chef.
Touhy replaces Boyd Rose, who left the position to spend time with family and personal career advancements.
"We are a family at Milton's and this change has brought about a sense of unity that equips us to be able to provide the level of service and cuisine we stand behind," said Jon McAloon, Milton's director.
In addition to Touhy, the restaurant has also promoted Derek Dollar to the position of chef de cuisine.
"The transition has been seamless due to the chemistry between these two extremely talented chefs," McAloon said. "With their similar culinary styles and professionalism, our patrons and staff have warmly welcomed the change and look forward to the new fall menu."
Touhy, who completed culinary school at Johnson and Wales University, has worked for a variety of restaurants in both Carolinas.
He returned to this area in 2006 and began working for The Big Ketch in Atlanta in January 2012. The Big Ketch is under the same ownership as Milton's. Touhy will also serve as that restaurant's executive chef.
Touhy said he plans to keep customer favorites on the menu, but Milton's customers can expect him to add his culinary flair with new dishes influenced by his Southern roots and a coastal twist from his experiences cooking in Charleston, S.C.
"I am so excited to work with the team at Milton's," Touhy said. "It is such a unique opportunity to work with a talented chef as Derek Dollar, a sustainable acre garden on the premises, a historical 150-year-old farmhouse as our venue and a remarkable staff."
Touhy said Milton's has the kind of character that can set them apart from so many other restaurants.
"I look forward to big things and continued success here," he said. "I couldn't be happier."
Dollar, who was promoted from sous chef, said the staff has been supportive during the transition.
"It's been refreshing working with Chef Touhy, and I look forward to my new role and our continued success," Dollar said.
Milton's celebrates its sixth anniversary Sept. 19 with a "Milton's Movie Nite" on the property's lawn, featuring the movie "Casablanca." Showtime is at 8:30 p.m.
The event will feature a three-course menu for $35.
